Ingredients

curry powder

vinegar

1 chopped onion

tomato puree

ground coriander,

4 cloves of garlic
-
5cm piece of root ginger
(or substitute with 3 tbsp ground ginger)

750g mince beef
-
2 peppers: 1 green and 1 red
-
1 can of chopped tomatoes
-
chilli powder (to taste)
-
garam masala (substitute with curry powder)

desiccated coconut
How to cook
-
Add the following to a frying pan:
-
3 tbsp curry powder
-
3 tbsp vinegar
-
Mix together to make a paste
-
Start frying then add 9 tbsp water to prevent drying out
-
Add 1 chopped onion and continue to fry for 2-3 mins

Add 1 tbsp tom puree and 1 tbsp ground coriander, stir and fry for 5 mins (add a little water if needed to stop it drying out)

Add 750g mince beef to the Curry Puree and stir for 5 mins

Add roughly chopped peppers: 1 green and 1 red
-
Add 1 can of chopped tomatoes
-
Mix together then transfer to a lidded casserole dish
-
Put in oven at 190 oC for 20 mins (lid on)

Take out of oven and add
-
1-3 tsp chilli powder (to taste)

3 tbsp garam masala (substitute with curry powder)
-
5 tbsp desiccated coconut
-
Mix together and return to oven for 25 min more (lid on)

Serve with rice
