Spicy Prawn Noodle Soup
Ingredients

1 litre chicken stock
-
2 tablespoons hoisin sauce
-
2 tablespoons oyster sauce
-
1 tablespoon fish sauce
-
10g sachet of instant Miso soup
-
2 inch fresh ginger root, grated
-
300g peeled king prawns
-
200g Rice noodles
-
100g Mushrooms
-
1 green chilli chopped
-
200g asparagus
-
100g sugar snap peas or mange tout
-
200g beansprouts

Garnish
-
1 teaspoon sesame oil
-
4 spring onions, shredded
-
Small bunch of chopped coriander
-
1 lime cut into wedges
How to cook
-
Simmer chicken stock in a large pan together with Hoisin sauce, oyster sauce and fish sauce, Miso and ginger
-
Cook noodles according to instructions on packet
-
Add mushrooms and chilli to soup and simmer for 3 mins
-
Add prawns, asparagus and other veg and simmer for 3 mins
-
Divide between 4 bowls and add the garnish
