Spicy Prawn Noodle Soup

Ingredients

  • 1 litre chicken stock

  • 2 tablespoons hoisin sauce

  • 2 tablespoons oyster sauce

  • 1 tablespoon fish sauce

  • 10g sachet of instant Miso soup

  • 2 inch fresh ginger root, grated

  • 300g peeled king prawns

  • 200g Rice noodles

  • 100g Mushrooms

  • 1 green chilli chopped

  • 200g asparagus

  • 100g sugar snap peas or mange tout

  • 200g beansprouts

Garnish

  • 1 teaspoon sesame oil

  • 4 spring onions, shredded

  • Small bunch of chopped coriander

  • 1 lime cut into wedges

How to cook

  • Simmer chicken stock in a large pan together with Hoisin sauce, oyster sauce and fish sauce, Miso and ginger

  • Cook noodles according to instructions on packet

  • Add mushrooms and chilli to soup and simmer for 3 mins

  • Add prawns, asparagus and other veg and simmer for 3 mins

  • Divide between 4 bowls and add the garnish
