1.5 Kg Beef

100g plain flour

1/2 bottle red wine

2 tablespoons (30 ml) red wine vinegar (or malt vinegar)

3 garlic cloves thinly sliced

800g baby onions

olive oil
-
1 cinnamon stick

3 bay leaves
-
1 teaspoon ground allspice (can substitute for 1/2 teaspoon of cinnamon + 1/2 teaspoon of ground cloves + pinch of nutmeg)

2 tablespoons tomato puree

200 ml beef stock

Salt and Pepper

Oven 160 oC (gas mark 3)

Chop beef into 1 inch cubes
-
Season the flour with black pepper and and salt
-
Coat the beef cubes with the seasoned flour

Fry beef cubes in hot olive oil a few at a time until browned

Fry onions until brown
-
Add garlic for a minute
-
Add wine, vinegar, cinnamon, allspice and heat in pan until it starts to bubble

Add the fryingpan contents to a casserole dish with beef stock, bayleaves and tomato puree
-
Put in the oven (with lid) for 3 - 4 hours.

Marinate your throat with the remaining half bottle of red wine while waiting.
