
Homemade Sweet and Sour Chicken/Pork
Ingredients

325 g Chicken (or Pork)

4-5 medium tomatoes

2 sweet peppers
-
1 small tin of pinapple chunks

2 cm root ginger, grated

4 tablespoons veg oil
-
1 large onion finely chopped
-
salt
-
3 tablespoons soy sauce
For the sauce
-
3 tablespoons vinegar
-
3 tablespoons sugar
-
2 tablespoons soy sauce
-
2 tablespoons cornflour
-
2 tablespoons tomato puree
-
3-6tablespoons orange juice

125 ml (1/4 pint) pineapple syrup (from the tin)

125 ml (1/4 pint) water
How to cook

Mix sauce ingredients in a bowl until well blended

Cut chicken (or pork) into 2 cm cubes

Cut tomatoes into quarters and peppers into thin slices

Drain and save pinapple syrup from the tin

Heat 3 tablespoons of oil in a pan and stir fry the chicken

Add the onion and ginger for 3 mins

Add salt pepper and soya sauce and continue frying for 4 mins

Meanwhile prepare the sauce: add the remaining 1 tablespoon of oil, pineapple and tomatoes and cook for 3 mins

Pour on sauce mixture and stir (important!) until is thickens and becomes translucent (that means see-through Leah)

Pour mixture over chicken/pork and peppers etc and heat together for 1 min.
