Homemade Sweet and Sour Chicken/Pork

Ingredients

  • 325 g Chicken (or Pork)

  • 4-5 medium tomatoes

  • 2 sweet peppers

  • 1 small tin of pinapple chunks

  • 2 cm root ginger, grated

  • 4 tablespoons veg oil

  • 1 large onion finely chopped

  • salt

  • 3 tablespoons soy sauce

For the sauce

  • 3 tablespoons vinegar

  • 3 tablespoons sugar

  • 2 tablespoons soy sauce

  • 2 tablespoons cornflour

  • 2 tablespoons tomato puree

  • 3-6tablespoons orange juice

  • 125 ml (1/4 pint) pineapple syrup (from the tin)

  • 125 ml (1/4 pint) water

How to cook

  • Mix sauce ingredients in a bowl until well blended

  • Cut chicken (or pork) into 2 cm cubes

  • Cut tomatoes into quarters and peppers into thin slices

  • Drain and save pinapple syrup from the tin

  • Heat 3 tablespoons of oil in a pan and stir fry the chicken

  • Add the onion and ginger for 3 mins

  • Add salt pepper and soya sauce and continue frying for 4 mins

  • Meanwhile prepare the sauce: add the remaining 1 tablespoon of oil, pineapple and tomatoes and cook for 3 mins

  • Pour on sauce mixture and stir (important!) until is thickens and becomes translucent (that means see-through Leah)

  • Pour mixture over chicken/pork and peppers etc and heat together for 1 min.
