
Sweet and Sticky BBQ Ribs
Ingredients

Racks of ribs

2 cans coca cola
Dry Rub

2 tablespoons soft brown sugar

1 tablespoon smoked paprika

1 tablespoon garlic powder
-
1 tablespoon Ground black pepper
-
1 tablespoon salt
-
1 tablespoon thyme
-
1 tablespoon ground cumin
BBQ sauce
-
1 onion, finely chopped
-
3 garlic cloves
-
200 ml tomato ketchup
-
4 tablespoons cider vinegar (can use vinegar)

2 tablespoons brown sugar
-
2 tablespoons soy sauce
-
1 teaspoon english mustard
-
1/2 teaspoon chilli flakes
How to cook

The day before you plan on grilling, sprinkle the ribs with a thick coating of the rub, making sure that all surfaces are covered. Cover and

Refrigerate the ribs overnight so the spices can penetrate and flavor the meat

Place ribs on a raised grid on an oven tray and fill the bottom with 2 cans of coca cola.

Cover with tin foil and roast at 150 oC for 2-3 hrs, turning halfway through, until the ribs are really tender but not falling apart

Carefully lift each out of the tin and sit on kitchen paper to dry.

Tip away the liquid and put the dry ribs back in the tin and coat all over with the sticky sauce.

​Mix the BBQ sauce ingredients together

Pour mixture on top of ribs
- Let the ribs cook for 20 – 30 minutes uncovered at 200 oC, so the sauce can caramelize and thicken.

If cooking on a BBQ, cover the ribs in the sauce when ribs are nearly cooked and then continue BBQing until ready.
