Brussels and Stilton Soup

Ingredients

  • 1 Kg Brussels

  • 2 litres vegetable Stock

  • 200g Stilton cheese

  • 4 cloves garlic

  • 2 large onions

  • 4 celery sticks

  • olive oil

How to cook

  • Heat olive oil in pan and fry the chopped garlic cloves onions and celery until slightly soft

  • Add 2 litres vegetable stock

  • Add 1 kg brussels and cook until soft

​

​

​

​

 

  • Liquidise the pan contents with a blender

​

  • Add 200 g stilton cut into small pieces

​

​

​

  • Serve after cheese has melted

​
