Brussels and Stilton Soup
Ingredients

1 Kg Brussels
-
2 litres vegetable Stock
-
200g Stilton cheese
-
4 cloves garlic
-
2 large onions
-
4 celery sticks
-
olive oil
How to cook
-
Heat olive oil in pan and fry the chopped garlic cloves onions and celery until slightly soft
-
Add 2 litres vegetable stock
-
Add 1 kg brussels and cook until soft
-
Liquidise the pan contents with a blender
-
Add 200 g stilton cut into small pieces
-
Serve after cheese has melted
