Paige's Carribean Chicken

Ingredients

  • 4 chicken portions

  • 1 green pepper

  • 1 chicken stock cube

  • 1 level tablespoon cornflour

  • 4 tablespoons tomato ketchup

  • 2 teaspoons curry powder

  • 1 onion

  • 1 small tin pineapple

  • 1 banana

How to cook

  • Oven at 180 oC

  • Remove skin from chicken and sprinkle with salt and pepper

  • Brown chicken on all sides

  • Chop onion and green pepper

  • Remove chicken from pan and place in casserole dish

  • Add onion and pepper to frying pan and fry gently for 5 min

  • Place cornflour, tomato ketchup and curry powder into a measuring jug with the juice from the pineapple tin and stir to make a smooth paste

  • Add 250 ml water to the onion and pepper and bring to boil

  • Add the cornflour mixture with continuous stirring

  • Add the crumbled stock cube and the chopped pineapple to the frying pan then mix and add to the casserole dish

  • Cover and cook in oven for 1 hour

  • Slice banana and add to the casserole 10 mins before serving
