Jambalya

Ingredients

  • 1 onion finely diced

  • 2 garlic cloves finely chopped

  • 1 stick celary finely chopped

  • 1/2 small green pepper finely diced

  • 2 teaspoons Cajun seasoning

  • 65 ml beer (optional)

  • 2 chicken stock cubes

  • 1 1/2 cups (300 ml) of water

  • 3/4 cup (150 ml) of basmati or jasmine rice

  • 2 tablespoons Worcestershire sauce

  • 12 large peeled prawns (can also add diced chicken breast)

  • 2 fresh tomatoes chopped

  • 1 lemon cut into wedges

  • Tabasco sauce to taste

How to cook

  • Cook the onion, garlic, celery and green pepper (and chicken breast if using) for 8 - 10 min

  • Sprinkle over Cajun spice, beer and Worcestershire Sauce

  • Add crumbled stock cubes water and rice

  • Simmer on low heat for 10 min

  • Increase the heat and toss in the prawns

  • Simmer for 5 min

  • Add tomatoes and juice from the lemon wedges

  • Add Tabasco sauce to taste
