
Jambalya
Ingredients

1 onion finely diced
-
2 garlic cloves finely chopped

1 stick celary finely chopped
-
1/2 small green pepper finely diced
-
2 teaspoons Cajun seasoning
-
65 ml beer (optional)
-
2 chicken stock cubes
-
1 1/2 cups (300 ml) of water
-
3/4 cup (150 ml) of basmati or jasmine rice
-
2 tablespoons Worcestershire sauce
-
12 large peeled prawns (can also add diced chicken breast)

2 fresh tomatoes chopped
-
1 lemon cut into wedges
-
Tabasco sauce to taste
How to cook
-
Cook the onion, garlic, celery and green pepper (and chicken breast if using) for 8 - 10 min
-
Sprinkle over Cajun spice, beer and Worcestershire Sauce

Add crumbled stock cubes water and rice
-
Simmer on low heat for 10 min
-
Increase the heat and toss in the prawns
-
Simmer for 5 min

Add tomatoes and juice from the lemon wedges
-
Add Tabasco sauce to taste
